1 Cup (150g) SR Flour
1 Cup (80g) Desiccated coconut
1/2 Cup (110g) Caster Sugar
125g Butter melted
395g can Condensed Milk
1/2 cup (125ml) strained fresh Lemon juice
1/3 cup (80ml) Passionfruit pulp
Preheat over to 180C (160C fan forced). Grease and line with baking paper a 18cm x 28cm slice pan
Combine flour, coconut and sugar in a bowl. Stir in melter butter and mix well.
Press evenly into to line pan and bake for 15 mins or until lightly browned.
For Passionfruit topping: mix condensed milk, lemon juice and passionfruit together with a wooden spoon until well combined and smooth.
Pour topping over hot base and return to the oven for a further 15mins or until set.
Cool in pan. Cut into slices and enjoy!
