This date loaf muffins recipe started life as a plain old date loaf but then I decided a loaf disappeared far too quickly when it was warm with butter melting into it….. then I chanced upon making it into muffins so the guests could enjoy them for breakfast, instead of just James and I enjoying the whole loaf for morning tea. I have tried to be a little healthy using Wholemeal SR flour (and I do like the added texture) and not as much sugar, but it is up to you and either way is delicious.
1 1/2 cups chopped pitted dates
1 1/3 cups hot brewed tea
1 3/4 cups Wholemeal Self Raising Flour (can use ordinary SR flour if preferred)
1/4 cup Plain Flour
1/2 teasp Cinnamon
1/2 teasp Nutmeg
3/4 cup Brown Sugar (I use 1/2 cup as we are trying to cut down on sugar)
125g Melted Butter
2 Eggs lightly beaten
1. In a bowl, combine chopped dates and hot tea. Allow to cool.
2. Preheat oven to 160C. Lightly grease medium size muffin tray (I use the silicon ones, so easy to pop out)
3. Sift flours and spices into bowl (if using WM Flour sift as much as you can but don’t discard the WM tasty bits put those in). Stir in the sugar, eggs, dates and butter until just combined.
4. Spoon mixture into moulds until 3/4 full. Bake for about 20 mins until golden and firm to touch
Serve with butter.
